TO MAKE THE SCONES

Heat the oven to gas mark 6 (400° F/ 200° C) and grease a baking tray.

In a large bowl, mix together the baking powder, flour and salt. Rub the butter into the flour until it resembles fine sand. Then, stir in the sugar and fruit until thoroughly blended.

Make a well in the center of the dry ingredients and pour in the milk. Stir with a spoon until it becomes too sticky, then use a cutting and folding motion with the spoon to blend in the final bits of flour.

Pat the dough into a 7" × 7" (18cm × 18cm) grid on a floured board [the dough will be about 1" (2.5cm) deep]. Cut 6 heart-shaped scones.

Place scones on the greased tray with plenty of room around each scone. Bake for 12–15 minutes or until golden and crisp on the outside but soft and melting on the inside. Slightly cool on a wire rack. Serve while still warm enough to melt a spread of butter.
